Lazy Coconut Flour Pancakes
So I'd been meaning to try this for a while.. and to say that I totally bullshitted my way through this recipe would be an understatement, but overall, I was pretty happy with the outcome.
First off, let me start by saying that in no WAY SHAPE OR FORM did MINE actually look like the photo above. First of all, I didn't oil my pan (less fat imop, plus I just sorta forgot) and I was entirely too impatient. I just sorta waited for them to bubble and flipped them over in a haphazard fashion until I achieved some sort of eggy pancakey roundish edible thing.
Also, most recipes call for egg WHITES because it's fluffier or whatever. I used the whole damn egg. I'm too broke to be ditching perfectly good yolks. In retrospect, I will probably separate the eggs next time and scramble the yolks on the side with a bit of cheese and only use the whites in my "pancakes". I had no problem with lack of fluffiness, but mine were a bit too eggy in my opinion (plus I forgot to cut the number of eggs back to two if using the entire egg, partially because I hadn't had coffee yet, and partially because I also threw in protein powder which sort of justified the extra moisture).
Here's what I used:
2 tsp coconut flour 1 tsp coconut oil 1/2 scoop vanilla protein powder 1/2 tsp baking soda 4 eggs cinnamon a FEW chocolate chips
topped with peanut butter, and a BIT of honey and a bit of butter.
There is NO WAY I used as much honey as they show syrupy crap in that picture. I maybe put like a teaspoon total. My protein powder has god awful Splenda in it anyways (it was free and beggars can't be choosers, usually I buy 100% whey protein when I can) so that helps sweeten it up. Also, I did not use a lot of chocolate. Lets face it, there's no way that's Paleo. I ALMOST used unsweetened cocoa powder instead (or better yet - raw cacao!) but I figured, screw it, it's Saturday morning, lets live a little. Plus I justify that the fiber in the coconut flour will kind of help balance out the sugar from the chocolate and honey.
So I ended up getting two meals out of this.. that were both very filling. The protein powder adds like 20g of protein and the eggs have like a billion so that's pretty well off if you ask me. Plus this is the first time I've had "breakfast" food that wasn't eggs w/ vegetables in like months so... cheers!
