Ingredients: 2 ripe avocados. 1/2 cup coconut cream. 1/4 cup fresh lemon juice. 1/4 cup honey or maple syrup. 1 tsp vanilla extract. Zest of 1 lemon. Pinch of sea salt.
Instructions: Halve the avocados, remove the pit, and scoop the flesh into a food processor or blender. In blender, add coconut cream, fresh lemon juice, vanilla extract, honey or maple syrup, lemon zest, and a small pinch of sea salt. Blend, scraping down the sides as necessary to ensure everything is well combined, until the mixture is smooth and creamy. If necessary, add extra honey, maple syrup, or lemon juice to suit your taste and adjust the sweetness or lemon flavor. Spoon the mousse into serving bowls or glasses once it's perfectly balanced. Chill and firm up in the refrigerator for at least one to two hours. If desired, top the chilled Coconut Lemon Mousse with extra lemon zest.
