Ingredients: 1 cup strawberries, roasted. 1 can 13.5 oz coconut milk. 2 cups vanilla ice cream. 1 tablespoon honey or maple syrup. 1/2 teaspoon vanilla extract. 1 cup ice cubes.
Instructions: Preheat the oven to 375F 190C. Spread the strawberries on a baking sheet lined with parchment paper and roast for 15-20 minutes, or until softened and slightly caramelized. Remove the strawberries from the oven and let them cool completely. In a blender, combine the roasted strawberries, coconut milk, vanilla ice cream, honey or maple syrup, and vanilla extract. Blend until smooth and creamy. Add the ice cubes and blend again until the shake is thick and frothy. Pour into glasses and serve immediately, optionally garnishing with additional roasted strawberries or coconut flakes.
