I do indeed have some trust issues with food, I have to trust other people to make sure my food isn’t cross contaminated, I can’t eat what other people are eating, and I have to check the ingredients on everything, it’s so hard to eat out and I’m a social nervous wreck, of course I’ll have trust issues
I probably need to do more research, according to this website celiacs is considered a disability since it affects food and eating, a major part of life. I don’t consider myself disabled, but I do feel the effects of missing out on social things related to food, and it is an extra mental burden. Just something to think about really, I’m gonna do more research I guess but it’s hard

I’ve been gluten free pretty much my entire life, I was fortunately diagnosed with celiacs at a young age. My entire life has been gluten free since then, so it’s normal for me.
I’m still hyper aware of the difference between my life and others. I’ve never had school lunches, I always bring my own food, I’m aware of cross contamination and ingredient. I found out recently that celiacs can be considered a disability (not an expert) in the sense it can impact mental health, and it hinders the social part of food and eating which is so important.
I just wish that there was more awareness because around 1 in 100 people are celiacs, around 1% of the global population, and many go undiagnosed or misdiagnosed because of a multitude of reasons. 1% is still 3 million people in the US, though 83% remain undiagnosed.
The only times I’ve really seen gluten free diets portrayed in media, besides those who are actually celiac or gluten free, is as a joke or making fun of a fad. No matter what though,

This is a super long rant BUT there’s so little awareness in general media that I’m aware of (I’m pretty out of the loop but I can tell) and recently I’ve met people that have been so accommodating it makes me wonder and it’s just been on my mind.
