Treacle Coffee Ice Cream
The heat is back on today, and Jules and I have been on the road, running errands for the greater part of it, so I shall take my coffee in ice cream form. Now, this is not something I’m very likely to do. I used to sort of detest the taste of cold coffee. And although I’ve been drinking coffee since I was a child, a few drops in my milk to start with, with heaps of sugar, until, rather quickly the ratio of milk to coffee was inversed, and the milk and sugar disappeared altogether; I’ve never enjoyed eating coffee eclairs or desserts made with the beverage. Until recently, and the use of Coffee Cubes, I didn’t even like drinking cold coffee beverages. But I really wanted to try making a coffee frozen treat, so I made this Treacle Coffee Ice Cream, and I’ll tell you what: I may be a convert! It’s indulgent but not too sweet , it’s smooth and suave, and it’s refreshing!
Ingredients (makes about 450 grams/1 pound):
¾ cup double cream
1/2 cup 2% fat milk
1 teaspoon Homemade Vanilla Extract
3 large egg yolks
3 tablespoons light brown sugar
2 tablespoons Lyle’s Black Treacle (or molasses)
1/3 cup freshly brewed strong black coffee, chilled; or Coffee Cubes, thawed
2 tablespoons good coffee grains
In a medium saucepan, combine double cream and milk. Stir Vanilla Extract into the milk mixture. Bring to a simmer over medium heat.
Meanwhile, energetically whisk egg yolks with brown sugar until pale yellow and the mixture falls from the whisk like a ribbon. Then, whisk in Black Treacle until well-blended. Once simmering, remove hot milk and cream mixture from the heat, and stir in chilled coffee. Gently pour over the eggs yolks, whisking constantly. While still whisking, add the rest of the coffee milk, until well-blended. Pour mixture back into the saucepan, and return over medium heat. Stir constantly with a wooden spoon until custard thickens, about 3 to 5 minutes. Remove from heat.
Pour Coffee custard into a rectangle container, and cover with cling film directly on the custard to prevent a skin from forming. Chill in the refrigerator, at least three hours.
Pour mixture in the bowl of an ice cream maker and follow manufacturer’s instructions. Churning should take about 35 to 40 minutes. About 30 minutes in, add coffee grains.
Spoon Treacle Coffee Ice Cream in an airtight container. Store in the freezer a couple of hours before eating.
