These Coffee Blondies are a delightful twist on the classic blondie, infused with the rich flavor of coffee and studded with creamy white chocolate chips.
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/3 cup unsalted butter. 1 cup light brown sugar. 1 large egg. 1 tablespoon instant coffee granules. 1 teaspoon vanilla extract. 1/2 cup white chocolate chips.
Instructions: Preheat oven to 350F 175C. Grease and flour an 8-inch square baking pan. In a small bowl, mix flour, baking powder, and salt together. Set aside. In a medium saucepan, melt butter over low heat. Remove from heat, add brown sugar, egg, instant coffee, and vanilla extract. Mix well. Gradually stir in the flour mixture until just combined. Fold in white chocolate chips. Spread the batter evenly into the prepared pan. Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs, not wet batter. Allow to cool completely in the pan before cutting into squares.
