My Delish Cold & Flu Recipe I was just bragging about how lucky I was not to have fallen ill in almost a year, when BAM, down for the count only 24 hours later. I had it coming. The internet says that Lemons, Garlic and Mushrooms are great cold remedies, so I made a recipe that combines them all. And I haven’t been sick since! ;) Knock on wood! Time: 20 minutes Ingredients: 1 Package of Mushroom Caps (~8 oz), 3+ Garlic Cloves, 1 Lemon, 2 Tablespoons Olive/Vegetable Oil, 2 Tablespoons Butter, Salt, Pepper Recipe: Preheat the oven to ~ 400 F. Rinse and chop an entire package of mushrooms in half. Add cut mushrooms to a shallow pan that has the surface covered in olive oil – should take about 2 tablespoons. Mince 3 or more garlic cloves and add to the pan full of oil and mushrooms. Put the mixture in the oven. While it is starting to warm-up, cut-up 2 tablespoons of butter into small pieces. Remove the pan, stir and add the butter pieces to the top of the mixture and return to the oven. While the butter is melting, cut up a lemon. Again, quickly remove the pan, squeeze half the lemon juice on top and leave the half lemon with the mixture, stir and return to the oven for another 5-10 minutes. Salt and pepper as desired. Tip: Vegetable oil does not burn as fast as olive oil, so if you are using olive oil, you may need to add an additional amount during the cook time to avoid burning the garlic and mushrooms. Keep them moist while in the oven.
