Some headcanons about gifts.
Cold side of the family
Starting with Julieta
Her food isn't exactly 'healing'. It's just speeds up the healing process many times over, to the point when injury gets healed immediately.
So her gift doesn't work with conditions that cannot be cured (disabilities, genetic disorders, etc)
As for illness, Julieta's food can heal the symptoms, but it won't remove infection from the body.
Julieta also has really fast regeneration even without her food.
Luisa
She is immune to blunt blows. The object will just crush against her, like that boulder in 'surface pressure.'
However, she can get hurt from weapon. She can be cut by sharp objects but it would take way more force. Bullets would get into her skin for about 5 millimeters and then get stuck.
Luisa's very resistant to poisons, drugs or alcohol. She can be still affected by those, but it would take a lot more substance than it would be for a person of her of her physique. And effects would be over faster that for normal people.
Isabela
Pre-movie Isabela knew that she can grow flowers of different color than pink and red. But she was doing so only if she was directly asked to. Abuela didn't count others color as 'femmine', but the the villagers wishes were more important in her eyes.
She can somehow 'talk' to plants. Not literally, but she will understand if the plant is sick or fading
Post-movie Isabela can grow edible plants, but the fruits would have the same taste and nutritional characteristics as the unripe one.
Becides making new plants, Isabela can also accelerate the growth process of already existing.
Mirabel
Mirabel does not have a gift.
Mirabel does not have a gift.

She wasn't selected as the future candle holder at the age of five. She doesn't have Casita as her gift. She isn't (insert any headcanon, saying that she has one) Because Mirabel having a gift ruins the whole point of movie.
