Ingredients: 1 lb ground beef. 1 onion, diced. 2 bell peppers, chopped. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 can 14 oz tomato sauce. 4 cups beef broth. 1 cup cooked rice. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup shredded cheese optional, for garnish.
Instructions: In a large pot, brown the ground beef over medium heat. Add diced onion, chopped bell peppers, and minced garlic. Cook until vegetables are tender. Stir in diced tomatoes, tomato sauce, and beef broth. Bring to a simmer. Add cooked rice, dried oregano, dried basil, salt, and black pepper. Stir well. Simmer for 15-20 minutes to allow flavors to meld. Serve hot, garnished with shredded cheese if desired.
