The world of college campus dining has evolved dramatically over the last couple of decades. Continuous changes have forced operators to become more agile, in order to keep up with trends and innovations. Based on this experience, experts predict that, over the next 10 years, campus dining will progress even more. According to Foodservice Equipment and Supplies magazine, here’s what a few of those specialists are forecasting:
Health and Wellness – Leaner proteins and plant-based proteins will occupy an even larger portion of the plate, and students will be looking for more globally inspired and authentic meals.
More Restaurant-Like – Consolidated dining areas will be replaced by micro restaurants and markets with individual identities based on what’s trending; right now, that includes Korean, Southeast Asian, African and island cuisines.
Interactive Meals – Students will be seeking more engagement with cooking and food on campus. From kitchen demos to meal kits, students with an interest in cooking will be able to get their hands dirty in the kitchen.
Renovations – Kitchens and dining areas will need to be able to adapt to ever-evolving trends. The renovation process will become more creative and strategic, to achieve greater efficiencies while meeting increased expectations from students. Making dining changes in the future will become a much-more-fluid task.
