FUDGE DIP & SHIITAKE MISO SOUP
The fudge dip is something you've probably seen online before as chocolate hummus. That's how I call it anyway. Basically it's cannelini beans blended up with cocoa powder, some plant milk and a sweetener. I made this recipe in the morning and then spread it onto some bread and topped it with strawberries for breakfast. I tried using it as a dip for apple slices, as Lindsay says she likes to have it, but I just couldn't. The texture really wasn't enjoyable. I actually considered throwing out the rest but tonight I wanted to make nice cream and since there was still a bit of the dip left in my food processor's container, I just threw my banana in there (laaaazy 😅😏) and you know what - it doubled my portion of nice cream without being too awful!
The miso soup was okay. I really wanted to add tofu but since my grocery store ran out, I used edamame beans. They also didn't have any shii-takes so I just used chestnut mushrooms. It's one of those recipes that'll remind me I can make a quick, Asian-style soup with the miso I have in my fridge. You can vary with the add-ins.
Would I make this again? The fudge dip, no. Though I might use cannelini beans to stretch out nice cream or smoothies when I don't have enough bananas. You can't taste any difference. The miso soup I think I would make again.
