Ingredients: 3 cups sushi rice, cooked. 4 sheets nori seaweed. 1/2 lb cooked shrimp, sliced. 1/2 cucumber, julienned. 1 avocado, sliced. Soy sauce, for dipping. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Lay a bamboo sushi mat on a clean surface. Place a sheet of nori on the mat, shiny side down. Spread a layer of sushi rice evenly over the nori, leaving a small border at the top. Arrange slices of shrimp, cucumber, and avocado in a line across the center of the rice. Using the mat, roll the sushi tightly from bottom to top, pressing gently to seal. Slice the roll into bite-sized pieces using a sharp knife. Serve with soy sauce, wasabi, and pickled ginger.
