Swipe ➡️➡️ for the full spread! I spent nearly the entire Sunday last weekend in the kitchen. It all started with some drenched lamb racks. I cut the most precious center pieces out the night before and seasoned them, then came the laborious work of trimming the rest off of the ribs the next afternoon. Once cleaned, all of the less precious lamb trimmings went through the grinder before being mixed with rice, eggs, seasonings, yada yada. Meanwhile a head of cabbage was quickly blanching away. Next up came the manicuring of blanched cabbage leaves, which were subsequently stuffed with the ground lamb and rice mixture before rolling them up tightly and laying them in a Dutch oven. A laborious process indeed. With the so-called Golubtsy brought to a braise it was time for a snack. A bit of reserved ground lamb mixed with some cheese and other fun flavors made a perfect stuffing for baby portobello mushroom caps. A delicious snack, but no time for resting here. Then followed the meticulous assembly of a diverse and vivacious salad. Sliced heirloom tomatoes made the base, which supported an array of baby cucumbers, red onions, feta cheese, nicoise olives, and heaps of fresh parsley. Plenty of pungent Italian olive oil here. This saga ends where it begins, as we return to those precious center cuts of the lamb rack. With a few turns in a brisk grill pan, these beauties were seared to perfection. By the time all that was over, it was most certainly time for some Beaujolais.
