A tasty treat with a hint of spicy ginger that is great for cooling off on hot days.
Ingredients: 1 cup freshly squeezed lemon juice. 1/2 cup water. 1/2 cup granulated sugar. 1 tablespoon grated ginger.
Instructions: Over medium heat, mix water and sugar in a small saucepan. Add sugar and stir until it dissolves. This will make a simple syrup. Take the pan off the heat and add the grated ginger. For 10 minutes, let it steep. Pour the ginger syrup through a strainer into a bowl. Throw away the ginger solids. Combine the freshly squeezed lemon juice with the syrup that has ginger in it. Place the mix into popsicle molds. Put in the popsicle sticks and freeze for 4 to 6 hours, or until solid. When the popsicles are frozen, run the molds under warm water to get the popsicles out. Have fun with these tasty lemon ginger popsicles!
