Ingredients: 4 large tomatoes. 1 cup cooked pasta. 1/2 cup pesto sauce. 1/4 cup cherry tomatoes, halved. 1/4 cup fresh mozzarella balls. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste. Olive oil for drizzling.
Instructions: Slice the tops off the large tomatoes and carefully scoop out the insides to create tomato cups. Sprinkle the inside of each tomato cup with a pinch of salt and pepper. In a mixing bowl, combine the cooked pasta and pesto sauce. Mix until the pasta is well coated with pesto. Gently stuff each tomato cup with the pesto pasta mixture.
