Can you recommend me a protection spell against black magic? Or more specifically, a protection spell against someone who does black magic to harm someone.

First, let’s just clear up some language.

There’s no such thing as “black” magic, and using the terms white and black to describe helpful and baneful magic has racist overtones, aside from the the fact that magic isn’t black or white because morality doesn’t work that way. (No one’s accusing anyone of racism, but “black magic” is an unfortunate turn of phrase that needs to be phased out of pagan language.)

If you suspect you have been cursed or that someone is trying to harm you with magic, you can always employ Counter Magic to neutralize the effects and turn the curse back upon the person who cast it.

I think they key wording for the counter spell question is that counter spell can counter any /card/ except a land or, by nature, something that says "cannot be countered"

Well, yes and no. It’s very easy to get confused about the difference between casting a card as a spell and, say, discarding it to use an ability like Bloodrush or Cycling. The former can be countered by Dissipate. The latter can’t (because it’s an activated ability, not a spell).

I suspect the source of people’s confusion is probably an issue like this.

Think of the phrase 'counter target spell' the way you think of 'destroy target creature'. The target has to be a creature for you to Murder it; the target has to be a spell for you to Dissipate it. Izzet Keyrune is only a creature some of the time, and you can’t Murder it when it’s not a creature. A card is only a spell when you’ve cast it and it’s on the stack, and you can’t Dissipate it when it’s not a spell.

when a card says "counter target creature spell" or just "counter target spell", does countering the creature spell mean that when i a creature is summoned it returns to its player's hand?

No. Countering a spell means putting the spell card into its owner’s graveyard, unless an effect specifically puts it somewhere else (like Remand).

The fact that a card specifies “target creature spell” just means you can’t use it on other kinds of spells that aren’t creatures.
