Ingredients: 1 cup couscous. 1 1/4 cups boiling water. 1/4 cup olive oil. 2 tablespoons lemon juice. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 cup diced cucumber. 1 cup diced tomatoes. 1/2 cup chopped fresh parsley. 1/4 cup chopped red onion. 1/4 cup crumbled feta cheese.
Instructions: Put couscous in a bowl that can handle heat. Cover couscous with a lid and pour boiling water over it. Let it sit for 5 minutes. Use a fork to fluff up the couscous, then set it aside to cool. Mix olive oil, lemon juice, salt, and black pepper in a small bowl with a whisk.
