So the stitch I'm talking about is a 3 thread coverstitch, which is really only done with a coverstitch machine, BUT! It is possible to recreate by hand. Is it practical? No. But is it satisfying? Absolutely!
First, figure out what direction the stitch is going. This will be opposite the direction that the looping thread is unraveling.
I have made a big version with yarn to demonstrate. The blue yarn is the stitching that shows on the front side. We are looking at the back side where the looping thread is, represented by the yellow yarn.
Next, make sure you have loops using the front side thread. The front will look like two parallel running stitches.
Pull a loop of the looping thread through the loops of the front side threads.
Take the looping thread and place it around the next front side loop.
Pull some slack from between the front side thread loops.
Place that loop around the other next front side loop.
Now pull another loop of your looping thread through the front side loops and repeat the steps!
