This Healthy Alfredo Mushroom Pasta Bake is a comforting casserole perfect for winter nights. It's packed with nutritious ingredients like whole wheat pasta, mushrooms, and spinach, and uses a lighter Alfredo sauce made with low-fat milk. Indulge in a cozy meal without sacrificing flavor!
Ingredients: 8 oz whole wheat pasta. 2 cups sliced mushrooms. 2 cups spinach. 1 tbsp olive oil. 2 cloves garlic, minced. 2 cups low-fat milk. 2 tbsp whole wheat flour. 1/2 cup grated Parmesan cheese. 1/4 tsp nutmeg. Salt and pepper to taste.
Instructions: Warm the oven up to 190C 375F. Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Put olive oil in a pan and heat it over medium-low heat. Cut up some garlic and add some sliced mushrooms. It will take about 5 minutes of cooking until the mushrooms are soft. Put spinach in the pan and cook for about two minutes, until it wilts. Take it off the heat. Low-fat milk and whole wheat flour should be mixed in a saucepan over medium-low heat. Stir the mixture often for about 5 minutes, or until it gets thick. Add nutmeg and grated Parmesan cheese and mix well. Add pepper and salt. In a large bowl, mix the cooked pasta, the mushroom and spinach mixture, and the Alfredo sauce. Mix everything together well. Put the mixture in a baking dish that has been greased. After the oven is hot, bake it for 20 to 25 minutes, or until the top is bubbly and golden. Enjoy while hot!
