Ingredients: 1 cup graham cracker crumbs. 1/2 cup unsalted butter, melted. 1 cup cream cheese, softened. 1 cup powdered sugar. 1 cup whipped cream. 1/2 cup lemon curd. 1/2 cup apricot preserves. 1 cup fresh apricots, diced. 1/2 cup chopped pecans. 1/4 cup shredded coconut.
Instructions: Melt butter and mix graham cracker crumbs in a bowl. Put the first layer into parfait glasses and press it down. Cream cheese should be beat in a different bowl until it's smooth. Mix the powdered sugar and whipped cream together until they are well mixed. Put this mix on top of the crust layer. Spread the lemon curd out evenly as the next layer. Then add the apricot preserves. Dice some fresh apricots and put them on top of the preserves. As the last layer, add chopped pecans and shredded coconut. Do this again and again until the glasses are full. Put the parfaits in the fridge for at least two hours before you serve them. If you want, you can decorate it with more whipped cream, lemon zest, and apricot slices.
