A comforting and hearty slow cooker chicken and dumplings recipe that's perfect for a cozy meal. The chicken becomes tender and flavorful as it simmers in the creamy sauce along with vegetables and aromatic herbs. Adding biscuit dough dumplings towards the end creates a satisfyingly fluffy texture.
Ingredients: 4 boneless, skinless chicken breasts, cubed. 2 cans condensed cream of chicken soup. 1 onion, chopped. 4 cups chicken broth. 2 cups frozen mixed vegetables. 1 teaspoon garlic powder. 1 teaspoon dried thyme. 1 teaspoon dried parsley. Salt and pepper to taste. 1 can refrigerated biscuit dough, quartered.
Instructions: In a slow cooker, combine chicken, cream of chicken soup, onion, chicken broth, mixed vegetables, garlic powder, thyme, parsley, salt, and pepper. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and vegetables are tender. About 30 minutes before serving, place quartered biscuit dough on top of the chicken mixture in the slow cooker. Cover and continue cooking until biscuits are cooked through and fluffy. Gently stir the dumplings into the chicken mixture before serving.
