Indulge in the rich flavors of homemade coffee ice cream in popsicle form. Creamy, smooth, and perfectly refreshing for any coffee lover.
Ingredients: 2 cups brewed coffee, cooled. 1 cup heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 large egg yolks. 1 teaspoon vanilla extract.
Instructions: Over medium-low heat, stir the heavy cream, milk, and sugar in a saucepan until they are hot but not boiling. Whisk the egg yolks in a different bowl until they are smooth. As you keep whisking, slowly pour about half of the hot cream mixture into the egg yolks. This will temper the eggs. Put the egg mixture back into the pan with the rest of the cream mixture. Stir the mixture all the time over low heat for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon. Do not let it get too hot. After taking it off the heat, add the brewed coffee and vanilla extract and mix them in. Let the mixture cool down all the way. Once the mixture is cool, pour it into popsicle molds, leaving some room at the top for the pops to rise. Put in the popsicle sticks and freeze until firm, at least 6 hours. Run warm water over the outside of the molds for a short time to get the popsicles out of them. Have fun with your homemade coffee ice cream pops!
