You can eat these traditional crepes for breakfast or as a nice dessert. They are very thin and delicate, and can hold both sweet and savory fillings.
Ingredients: 1 cup all-purpose flour. 2 eggs. 1/2 cup milk. 1/2 cup water. 2 tablespoons melted butter. 1/4 teaspoon salt. 1 teaspoon sugar. Additional melted butter for cooking.
Instructions: In a blender, combine flour, eggs, milk, water, melted butter, salt, and sugar. Blend until the batter is smooth and bubbles form on the surface, about 30 seconds. Heat a non-stick skillet or crepe pan over medium-high heat and brush it with melted butter. Pour 1/4 cup of the batter into the center of the skillet and quickly tilt the pan to spread the batter evenly. Cook for about 1-2 minutes, until the edges of the crepe start to lift and the bottom is golden brown. Carefully flip the crepe using a spatula and cook for another 1-2 minutes on the other side. Remove the crepe from the skillet and repeat with the remaining batter, adding more melted butter as needed. Serve the crepes warm with your favorite fillings or toppings.
