✿ クレスペッレ | Crespelle ・イタリア語でクレープのことで、イタリアの郷土料理としても親しまれています。ラテン語の「縮れた」という意味の語源を持つと言われています。甘いデザートにも食事にも使われ、薄く焼いた生地にさまざまな具材を包んだり、重ねたりします。卵たっぷりの生地にパティシエール（カスタードクリーム）やベシャメルソースを詰めることもあれば、チーズやハムなどの具材で巻き込むこともあります。ポルチーニ茸やトリュフを使ったものから、栗や生ハムを使ったものまで、幅広いバリエーションがあります。薄い生地で、ピザ生地のようなサクサクもちもちした食感を持つクレスペッレもあります。
