Instructions: In a large bowl, combine mashed potatoes, cheddar cheese, bacon, green onions, sour cream, breadcrumbs, salt, and pepper. Mix well until everything is evenly distributed. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Place the baking sheet in the freezer for about 30 minutes to firm up the potato balls.
