These loaded baked potato balls are a delicious twist on classic baked potatoes. They're crispy on the outside, creamy on the inside, and packed with all the flavors of a loaded baked potato.
Ingredients: 3 large potatoes, boiled and mashed. 1 cup shredded cheddar cheese. 1/4 cup cooked and crumbled bacon. 2 green onions, finely chopped. 1/4 cup sour cream. 1/4 cup breadcrumbs. Salt and pepper to taste. Oil for frying.
Instructions: In a large bowl, combine mashed potatoes, cheddar cheese, bacon, green onions, sour cream, breadcrumbs, salt, and pepper. Mix well until everything is evenly distributed. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Place the baking sheet in the freezer for about 30 minutes to firm up the potato balls. Heat oil in a deep fryer or large pot to 350F 175C. Carefully drop the chilled potato balls into the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove the potato balls from the oil and place them on a paper towel-lined plate to drain any excess oil. Serve hot with additional sour cream and green onions for dipping, if desired.
