Ingredients: 3 pounds russet potatoes, peeled and cubed 1 cup heavy cream 1/2 cup unsalted butter 1 teaspoon salt 1/2 teaspoon black pepper 1/4 cup sour cream (optional) Chives for garnish (optional) Instructions: Place the cubed potatoes in a large pot and cover with cold water. Add salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain well. In the same pot, add the butter and heavy cream. Heat over low until the butter melts. Return the potatoes to the pot and mash until smooth. Stir in sour cream (if using), salt, and pepper. Adjust seasoning to taste. Serve hot, garnished with chives if desired.

Bake in the preheated oven for about 25-30 minutes, flipping halfway through, or until the wedges are golden brown and crispy.
