In this comforting soup, earthy mushrooms and crispy lamb slices bring out the full flavors.
Ingredients: 500g mushrooms, sliced. 1 onion, diced. 2 cloves garlic, minced. 1 liter vegetable broth. 200g lamb, thinly sliced. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add onions and garlic, saut until translucent. Add mushrooms, cook until they release their juices. Pour in vegetable broth, bring to a simmer. Season with salt and pepper to taste. Meanwhile, in a separate pan, heat olive oil over medium-high heat. Add thinly sliced lamb, cook until crispy and golden brown. Once the soup is ready, ladle into bowls. Top each bowl with crispy lamb slices. Garnish with fresh parsley. Serve hot and enjoy!
