Quick to the table Lamb Meatballs
Easy to make lamb meatballs flavored with curry, cumin, and turmeric. Served over a brown rice and riced cauliflower mix. A lovely dinner made in under 40 minutes.
I grew up in a 3 bedroom apartment with my mom, stepdad, and two sisters. It was an 1100 square foot typical 1930's building. The landlords were Greek so lamb, baklava, and the bread with an egg in the center came around once or twice a year. I always enjoyed what they were willing to share. As a kid, we ate beef, chicken, and pork regularly. But lamb was always a treat.
I shop Aldi consistently and they have upped their game as far as selection. Back in my 20's I would only shop Aldi when I had 20 bucks left to my name because you could eat for a week on that much money. I must admit their selection was not healthy. It was the kind of store you went to and bought a lot of processed foods. Over the past 10 years, they have made such strides. I buy organic fruits, vegetables, cheese, meats, and enjoy the selection. It's not so overwhelming and I can get through the 4-5 aisles pretty quickly. They have interesting specialty items. The staff they hire in my area tends to be upbeat and friendly. It makes for a nice shopping experience. So that's where I come to this recipe. They now carry ground lamb. Except for the turmeric they had everything I needed to make this recipe.
You will need a bowl to throw in all the ingredients. Form the lamb into balls and place on a baking sheet. Depending on how you serve them you can make mini meatballs for appetizers or larger for a dinner serving. Just yesterday I used these same ingredients in ground turkey and it was delicious! Sometimes ground turkey can seem bland but not with this handful of spices.
On another note, I just pulled up Google maps and sure enough, the building I grew up in is still there and it's funny because it looked different to me. I wonder who lives there now.
Makes 10-15 depending on size (for my house I made 15 so each person got 3)
1 pound ground lamb (I buy mine at Aldi)
1 tablespoon dried parsley
1 tablespoon soy sauce or tamari
Preheat oven to 375 degrees Fahrenheit. Line a cookie sheet with parchment paper.
Place all ingredients in a bowl and mix to combine. Form into 1-2 inch balls, place on cookie sheet with some room in between each and bake for 20-25 minutes checking doneness after 18-20 minutes.
Serve hot with brown rice and riced cauliflower and a few lemon wedges.
