Ingredients: 1 cup hazelnuts, chopped. 1 cup old-fashioned oats. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a medium bowl, whisk together the oats, flour, baking soda, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Fold in the chopped hazelnuts. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon or your fingers. Bake for 10-12 minutes or until the edges are golden brown.
