The Yordle portion of Piltover was practically buzzing with anticipation. Cupcake Week was almost upon them. Eight days of making, critiquing, sharing, gifting, trading, merchandising, contemplating, ruminating upon and - most importantly - sampling the traditional fare of the yordle people was soon to be celebrated Valoran-wide.
A massive bake sale was being organised on the YASP lawns as part of the celebration. Caitlyn had already started baking her contribution to the event.
Vegan carrot and cinammon cupcakes.
Delicious, soft cupcakes with a subtile, yet strong, cinammon flavor and powerful taste ot carrot. Many recipes of carrot cake contain grated carrot, but carrot puré makes the cupcakes incredibly moist, so that's why I use that instead. Autumn is my favorite season, and I will keep posting seasonal recipes. Please let me know if you have any requests, everything can become vegan!
6 big carrots 4 dl (1,7 cups) flour 3,5 dl (1,5 cups) sugar Pinch of salt 2 teaspoons baking powder 1 heated tbsp cinnamon 1,5 dl (0,6 cups) sunflower oil 2 dl (0,8 cups) coconut flakes
Frosting: About 200 g vegan cream cheese (I use one package of tufutti original) 2,5 dl (1 cup) icing sugar 2 teaspoons lemon juice
Put the oven on 150 ºC (300 ºF).
Boil the carrots until soft. Don't bother to peel them, you won't notice the skin anyways. Mix in a food processor. Add all the ingredients and mix to a smooth batter.
Pour the mixture into cupcake molds and bake for 10-15 minutes. Mix all the ingredients for the frosting fuffy, and decorate the cupcakes when they have cooled completely, or the frosting will melt.
Usually I would pipe the cupcakes with frosting, but this time it became to runny. Of course you can pipe the cupcakes if you want to, or use other frostings. Or just eat them like they are. The limitations have no limitation!

The taste takes me back to being little and queueing up at the Post Office with my Grandparents and then on to Taylors sweet shop over the road for a bag of pear drops and some mint sensations before we went for a fresh hot buttered bread cake before doing the shopping on a Thursday morning.
