These cupcakes that look like Impossible Pumpkin Pie are a fun take on the classic pumpkin pie. The inside is like pumpkin pie and the outside is like a cupcake. Great for fall or whenever you want something pumpkin-y!
Ingredients: 1 can 15 ounces pumpkin puree. 1 can 12 ounces evaporated milk. 3/4 cup white sugar. 1/2 cup all-purpose flour. 1/4 cup unsalted butter, melted. 2 large eggs. 2 teaspoons vanilla extract. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon salt. 1/4 teaspoon baking powder. 1/4 teaspoon baking soda.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Add the pumpkin puree, evaporated milk, and sugar to a large mixing bowl. Mix everything together well. Mix the eggs, vanilla extract, and melted butter into the mixture. Stir the mixture until it is smooth. Mix the flour, cinnamon, nutmeg, cloves, salt, baking powder, and baking soda together in a different bowl. Add the dry ingredients to the wet ones one at a time, stirring constantly until everything is well mixed. Fill up each cupcake liner about three quarters of the way to the top with batter. After the oven is hot, bake the cupcakes for 20 to 25 minutes, or until they are set and a toothpick inserted into the middle comes out clean. Take the cupcakes out of the oven and let them cool in the pan for a few minutes before moving them to a wire rack to cool all the way down. After the cupcakes have cooled, you can either dust them with powdered sugar or put whipped cream on top of them before serving. Have fun with your tasty Impossible Pumpkin Pie Cupcakes!
