I made a dungeon that is as close as to canonical as i could.
If you have a fb account, go to "House of Leaves Book Club".
As stated there, if you use it, all i ask in return is that you tell me how your party faired/died.

dm: as you crest the top of the caldera, you see the most MASSIVE dragon waiting there. You've heard legends of ancient red dragons, but NEVER a dragon of this magnitude
players: pshh. It cant be /that/ big...
dm: *pulls out mini*
dm: You travel across the icy tundra, carefully watching your step as you cross the large fjord, hoping the ice holds and you dont plunge into the frigid water.
*rolls a dice*
and suddenly, about 10 feet away, a hungry leopard seal breaks through the ice! Roll for initiative.
*several rounds later*
barbarian: Its almost dead! I roll to attack... NAT 20!
dm: alright. How do you kill it?
bafbarian: i b r e a k i t .
Just lay waste to it with my great club.
dm: ... you open a portal to the void.
Party in unison: W H A T ?!
dm: void if seal broken, my dudes.
Me: so... Would horse tranquilizer be twice as effective or would the centaur have advantage on his FORT save because he's only /half/ horse?
DM: I asked you to stop coming last week.
I dont know the lore/physiology behind mimics, too lazy to look it up and thought it was too good to pass up.
Here is my idea for a baby mimic.
It looks like a coin purse. Teeth.
Reach inside, it bites off a finger and scurries off. It will repeat this process, grtting larger and larger, bitting off larger digits/appendages/limbs until it gains enough caloric surpluss to retreat to a deep dark corner whaere it can form a chysalis and evolve into the shape of a "larger storage container" like a chest.
By this logic, should one gain enough caloric value and escape the dungeon, it could make another chysalis and take on the shape of a cabin, well, doorway, etc.
I'll try to write up some stats if anyone is interested.
DM: you round the corner and see 4 tabaxi guards patroling the corridor.
Rogue: I roll for perception. 14
DM: your keen and trained eyes spot a few more tabaxi archers hiding out on the rafters. 3 More to be exact, their tails playfully twitching back and forth in a playful manner, clearly bored and wanting a target. They havent noticed your party yet.
Barbarian: I would like to ra-
Whole Party in Sync:
NO, YOU WOULD NOT!
Barbarian: Guys, I litterally have disadvantage to stealth. I don't have another option.
Paladin: I too, crave battle and am quite the clumsy oaf in plate mail who is naught of use but hitting.
Mage: Guys... I have an idea.
DM: If you're planning on casting Minor Ill-
Mage: I CAST MINOR ILLUSION!
DM: *sighs defeatedly* ...You make a 5 foot cucumber, dont you?
Mage: I make a fucking 5 foot cucumber.
DM: *rubs eyes*
They.... *rolls numerous will saves*...
They lose their shit, jump 15 feet in the air and then scramble at double pace out the nearest windows.
Rogue and Mage: *high fives*
When I posted this dumb idea, I expected a few laughs (at best). I'm both surprised and shocked at the response that this dumb picture has gotten, so here are the stats. If you make fan art or otherwise art work of your players encountering these PLEASE ADD IT.
As far as behabivior of these Baby Mimics go, they're most likely solitary creatures though don't mind sharing somewhat close proximity to others. Much like most spiders.
They can be found one or a few in a room or
(as @hairandtheotter suggested)
You kill a "Mamimic©" and 2d4 + 5 of these come skittering out aggressively.
I felt the need to add the numbing bite for a bit of fun. DM's you don't have to utilize it, but it's an option. I'm certain I'm not the only DM who would love the look of panic on the party's face as you randomly tell a PC (who picked up a strange item a few rooms back) to make a DC 14 CON save.
Also, we have all seen the comic pratfals in film where something tiny and aggressive latches onto/climbs a character and their friends end up hitting them in attempts to crush the critter. That is why i added the bit about the DC16 save for other PCs to not hit the grappled PC when hitting the Baby Mimic. If they fail the save, the amount of damage done is evenly split between the 2 of them.
This could be a great way to burn a few spell slots while not taking too much damage before a trap room or other event thr DM may have.
When an NPC gives your lv.3 party a basic fetch quest that doesnt require violence, but you already know you're gonna come back covered in blood.
