I'd knit it with the suggested yarn of Kelbourne Woolens Scout but in Denim and Oatmeal Heather (instead of the shown Moss Heather and Natural)

I'm gonna go with the Seoul Blouse by Aegyoknit
I'd knit it with Witch King and Black Jeans from Bad Sheep Yarns (both yarns would be held double with Witch King in Suri Lace, which is the third yarn pictured) - going for just enough contrast to know there's colorwork but little enough contrast that it can look monochromatic from a distance
