Coco isn't representation, it's a bundle of stereotypes about Mexico that Mexican-Americans believe about Mexico.
It represents a version of Mexico that never existed, badly twists the beliefs behind the days of the dead and presents Mexico as a country that hasn't progressed in the last 50 years.
The only people I've seen praising Coco are Mexican-Americans, particularly those that have never been to Mexico or participated in the cultural life of Mexico.
It's a movie made for Americans (including Mexican-Americans) that exploits Mexican traditions and peoples. It does very little to show the complex traditions, fed from dozens of different cultures (Mayan, Aztec, Zapotec, Mexica, Spanish, among others) and blended over the centuries after conquest.
It's a nice story but it's about as accurate as Pocahontas.

Learn about the Catrinas, the fancy skeleton ladies first meant to represent those who turned their back on their indigenous roots and later a symbol for the death of the upper class.
Hell, watch the Chingones Hasta La Muerte ads, they might be ads for a beer company but they did a better job than Coco.
