This cornbread is gluten-free and easy to make. It goes well with soups, stews, and chili. It's delicious, moist, and great for any event.
Ingredients: 1 cup gluten-free cornmeal. 1 cup gluten-free all-purpose flour. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/4 cup granulated sugar. 1 cup milk or dairy-free alternative. 2 large eggs. 1/4 cup melted butter or dairy-free alternative. Optional: 1/2 cup canned corn kernels, drained.
Instructions: Turn on your oven and heat it up to 375F 190C. A square baking dish or cast-iron skillet that is 9 inches 23 cm across should be greased. Whisk cornmeal, flour, baking powder, salt, and sugar together in a large bowl. Mix the milk, eggs, and melted butter in a different bowl. Add the wet ingredients to the dry ones and mix them together until they are just mixed. If you want to use canned corn kernels, just fold them in. Spread the batter out in the baking dish or skillet that has been prepared. Once you put a toothpick in the middle and pull it out clean, the top is done. Bake for 20 to 25 minutes. Let it cool a bit before cutting it up and serving it.
