Ingredients: 6 medium-sized potatoes, peeled and sliced into 1-inch rounds. 1/4 cup olive oil. 3 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 teaspoon curry powder. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Set the oven to 425F 220C and heat it up. Mix garlic powder, dried thyme, dried rosemary, salt, and pepper in a large bowl with olive oil. Toss the potato slices in the bowl with the spice mix until they are well covered. Place the potato slices on a baking sheet that has been lined with parchment paper so that they are all face up. Bake the potatoes for 30 to 35 minutes, flipping them over once, until the outside is golden brown and crispy and the inside is soft. Before serving, sprinkle with chopped fresh parsley.
