A tasty and good-for-you salad with fresh veggies, cooked quinoa, and a spicy soy dressing. It's easy to make and tastes great. This Spicy Quinoa Salad with Soy Dressing is a great side dish or light meal.
Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 red bell pepper, diced. 1 cucumber, diced. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup roasted peanuts, chopped. 2 tablespoons sesame seeds. 1/4 cup soy sauce. 2 tablespoons rice vinegar. 1 tablespoon honey. 1 teaspoon sriracha sauce. 1 clove garlic, minced. 1 teaspoon grated ginger. Salt and pepper to taste.
Instructions: In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and water is absorbed. Remove from heat and let it cool. In a large mixing bowl, combine the cooked quinoa, diced red bell pepper, cucumber, cherry tomatoes, red onion, cilantro, mint leaves, roasted peanuts, and sesame seeds. Toss to mix well. In a small bowl, whisk together soy sauce, rice vinegar, honey, sriracha sauce, minced garlic, and grated ginger to make the dressing. Pour the dressing over the quinoa salad and toss until everything is well coated. Season with salt and pepper to taste. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together. Serve the spicy quinoa salad chilled, garnished with additional cilantro, mint, and sesame seeds if desired.
