Ingredients: 2 cups almond flour. 1/2 cup coconut sugar. 1 tsp baking powder. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp salt. 1/4 cup coconut oil, melted. 1/4 cup unsweetened applesauce. 1 tsp vanilla extract. 1/2 cup diced apple peeled and cored. 1/4 cup powdered sugar for coating.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put baking powder, cinnamon, nutmeg, salt, coconut sugar, and almond flour in a bowl. Put in the applesauce, vanilla extract, and melted coconut oil. Mix well until a dough forms. Add the apple dices and mix them into the dough until they are spread out evenly. Make balls out of dough about the size of a tablespoon and cover them in powdered sugar. Spread the dough balls out on the baking sheet that has been prepared. Put it in the oven for 12 to 15 minutes, or until the edges turn golden brown. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Serve and have fun!
