These mini buttermilk bar donuts are a delightful treat perfect for breakfast or snacking. They are light, fluffy, and have a hint of tanginess from the buttermilk. The powdered sugar adds a sweet finishing touch.
Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 cup buttermilk. 1 large egg. 2 tbsp unsalted butter, melted. 1/2 tsp vanilla extract. Oil for frying. Powdered sugar for dusting.
Instructions: In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; the batter should be lumpy. Heat oil in a deep saucepan or fryer to 350F 175C. Using a mini donut mold or a spoon, drop small portions of the batter into the hot oil, carefully avoiding overcrowding the pan. Fry for 2-3 minutes or until the donuts are golden brown, turning them occasionally for even cooking. Remove the donuts with a slotted spoon and drain on paper towels. While still warm, dust the mini buttermilk bar donuts with powdered sugar. Serve and enjoy!
