I dont know a whole lot about Deltaverse Paps, where can I learn about him?

Not actually much of anything, besides the fact he’s dead. Ultratale and Vitaltale focused mainly on Sans (Delta), Frisk (Zeta), and kinda the bravery soul (Beta), gaster showed up at one point, and it was mainly a lot of fighting. Deltaverse papyrus showed up more in that delta vs insanity sans animation than the og au.
