Ingredients: 2 large sweet potatoes, baked and mashed. 1 cup all-purpose flour. 1/4 cup maple syrup. 6 slices bacon, cooked and chopped. 1/4 cup grated Parmesan cheese. Salt and pepper to taste.
Instructions: In a large bowl, mix together mashed sweet potatoes, flour, and maple syrup until a dough forms. On a floured surface, roll the dough into ropes about 1 inch thick. Cut the ropes into bite-sized pieces. Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Using a slotted spoon, remove the gnocchi from the water and transfer to a serving dish. In a skillet, cook the chopped bacon until crispy. Remove from the skillet and set aside. In the same skillet, add the cooked gnocchi and cook until lightly browned. Toss the cooked gnocchi with the crispy bacon and grated Parmesan cheese. Season with salt and pepper to taste.
