Yesterday we had Sunday Dinner. The chicken cost us £2.99 the veg cost us £4.50, the pastry was £1 and the oat cream £1. . . So Tanny had chicken and veg yesterday, I had veg. Today I turned the leftovers into meals for lunch and dinner for the rest of the week. . . Roast Chicken and Veg Pie for Tanny and Sunday Dinner Veg Pie for me for dinner tonight. . . 2 chicken, stuffing and gravy pies for Tanny for work. . . Chicken, Veg and Pearl Barley Stew for Tanny that will be enough for a couple of days. . . Roast Veg Soup for me that again will last a few days for me. (I also like to turn it into a sauce for pasta. . . Then of course there is the stock pot with what will end up being around 5 Litres of Chicken Stock. . . That’s not to mention the leftover cabbage and cauliflower I’m using for breakfast for the next couple of days. . . We will be well fed for the next few days and it didn’t cost the Earth. SUNDAY DINNER!!! Gee it’s been ages since we had a proper roast dinner. I find it the kind of meal that then feeds us for a week!!! especially if we’re clever how we use the leftovers. . . 2 x 2 roast dinners, 1 Pie x 8 serves, Roast Veg Quiche x 6 serves, Veg Soup x 8 serves. The soup can be used as a sauce too perhaps for pasta. . . So for £5 the Roast and £6 of Veg we can feed ourselves for nearly 2 weeks. When I had a houseful still it fed us for a week. Totally worth it!!! Just takes planning. Cooking everyday more than likely means leftovers. And after a long day at work, that’s perfectly fine. When I roast a whole chicken like I did the other day, I anticipate enough leftover meat for sandwiches. But today, I wanted something different. So this new recipe is really a glamorized Chicken A La King inside buttery, cheesy puff pastry. (You can also call it a supersized posh Hot Pocket). What elevates it is the use of fresh mushrooms and the addition of a layer of ham. I also used spices not usual in the dish: nutmeg and tarragon. (These spices make all the difference!) Simple roast chicken and homemade corn bread. For those who are curious, I always use @guarnaschelli’s buttermilk cast iron corn bread recipe, there’s simply no way to improve on it. (I did add a little parmigiano reggiano in the mix just cuz....) Browning the butter before pouring the batter (a la Yorkshire pudding) is super genius. This is prime example why there are but a handful of chefs whose recipes I revere like the Bible—coz they don’t leave out an ingredient or technique, or worse, mislead. This turned out to be unexpectedly more difficult to make. Over bok choy sautéed in garlic sauce is silken tofu, new egg and anchovies. Yesterday, I mentioned the flexibility of chicken thighs. Tonight, we give it a Southeast Asian spin: Spicy sliced chicken thighs are sautéed with vegetables, placed over mung bean vermicelli, and topped with crispy chicken skin. I used a bit of curry and sambal to give it some heat, which pair quite well with the sweetness of the veggies and saltiness of the crispy skin. For me, the key to Asian cooking is layering flavors.
