Divlji zec u umaku sa višnjama
Divlji zec u umaku sa višnjama
MARINADA
-nacjeckati luk,celer i mrkvu,staviti u lonac
-dodati vino,zrna papra,ocat i lovorov list
-sve kuhati do vrenja,zatim hladiti cca 30 min
-u staklenu zdjelu staviti komade zeca i preliti marinadom,ostaviti da stoji 12 sati na svježem zraku
KUHANJE
-ocijediti meso,procijediti marinadu
-nasjeckati mrkvu,celer,luk,kadulju,ružmarin i zgnjećiti češnjak
-pirjati na maslinovom ulju u plitkom loncu
-dodati meso i nastaviti pirjati
-podlijevati marinadom i kuhati 2 sata
-nakon što vino ispari,podlijevati vručim temeljcem
-ocijediti meso i držati ga na toplom
-štapnim mikserom izmiksati povrče,dodati
čokoladu, chilli i Worcester umak
VIŠNJE
-na malo konjaka rastopiti šećer,dodati procijeđene višnje,flambirati
-šećera što manje jer je umak sam po sebi slatkast,a kiselost višanje će razblažiti i osvježiti cijelu priću
