Dorayaki are a classic Japanese sweet treat. These fluffy pancakes filled with sweet red bean paste are a delightful combination of soft and slightly crispy textures, along with the rich flavor of anko sweet red bean paste. Perfect for breakfast or as a sweet snack.
Ingredients: 2 cups all-purpose flour. 2 tsp baking powder. 1/2 cup sugar. 2 large eggs. 1/2 cup milk. 1/2 tsp vanilla extract. Sweet red bean paste anko. Vegetable oil for cooking.
Instructions: In a bowl, mix flour and baking powder. In another bowl, whisk eggs and sugar until creamy. Add milk and vanilla extract to the egg mixture and mix well. Combine the wet and dry ingredients to make a smooth batter. Heat a non-stick pan over low-medium heat and lightly oil it. Pour a small amount of batter into the pan to form a pancake about 3 inches in diameter. When bubbles form on the surface, flip the pancake and cook until both sides are golden brown. Repeat the process with the remaining batter to make several pancakes. Spread a spoonful of sweet red bean paste on the bottom side of one pancake, then sandwich it with another pancake, bottom sides together. Serve your delicious Dorayaki warm and enjoy!
