These sweet plantain drop biscuits are a delicious and nutritious Paleo-friendly alternative to traditional biscuits. They're made with ripe plantains, eggs, coconut oil, and coconut flour, resulting in a moist and flavorful treat.
Ingredients: 2 ripe plantains. 2 eggs. 1/4 cup coconut oil, melted. 1/4 cup coconut flour. 1/2 teaspoon baking soda. 1/4 teaspoon sea salt.
Instructions: Set oven temperature to 175C 350F. In a mixing bowl, peel and mash the ripe plantains. Mix thoroughly after adding the eggs and melted coconut oil to the mashed plantains. Mix the baking soda, sea salt, and coconut flour in a different bowl. Stirring until thoroughly combined, gradually add the dry ingredients to the wet ingredients. Spoonfuls of batter should be dropped onto a baking sheet lined with parchment. Bake the biscuits for 20 to 25 minutes, or until they are cooked through and golden brown. Before serving, remove from oven and allow to cool slightly.
