Chili paste - Dried chili salsa
I often make variations of this to accompany our meals. The simplest version is just dried chili and vinegar, and the one I use the most. Add in a pan:
5-6 big dried chili ( i used aji mirasol) 100 gr sun dried tomato in oil (with oil) 1/2 dl walnuts 1-3 Tsp concentrated vinegar
Water to cover, boil until soft. Blend until smooth.
Regrowing Store-Bought Dried Chili Peppers
I’ve tried on many occasions, it is really hard to get store-bought “dried” chillies to regrow. I get so excited when I find cool exotic varieties in Latin and Asian supermarkets, but most of the seeds do not germinate for me. My two guesses are that it may be due to the age of the chillies or the drying method may have killed off the seed viability.
This year I tried again with 10 varieties. Boy, was I stoked when 4 varieties actually germinated. If I correctly identified them, they are Pequin, Guajillo, Tien Tsin and Chiltepin. I’ve been obsessed about doing this because…well I want to see what the fresh version of these chillies look like. We don’t see these fresh in Northeast US.

Spicy and Crispy Sambal
Ingredients 6 shallots, sliced 6 cloves garlic, sliced 3 tbsp dried shrimps, soaked and pat dry 30 g dried chilies 3 red chilies, coarsely chopped 5 cili padi, chopped 2 tbsp sugar 1/4 tsp salt 6 tbsp vegetable oil
Instructions Heat oil over medium heat. Cook the garlic until they are golden brown in color. Remove and set aside. Cook the shallots till golden brown. Remove and set aside.
