Short answer:
If it works for the plot, the joke, or simply for the sake of having it happen, why not? We don't know how his head actually works — Grim said that he got a pumpkin and wore it as his head, and kinda just left it at that. He's also implied to have his head squashed (haha) off-screen at the end of the special, and I imagine he's able to either replace it or just... grow a new one somehow?
I've also drawn Puppy pluck his head off just because the mental image was funny to me:
As for the long answer...
Everything we've seen in the show seems to suggest the idea of a human body with a pumpkin head sitting on top of it, including:
His backstory about being beheaded after gaining eternal life
The very distinctly humanoid shape you can see through his clothes in the scene where he's trying (and failing) to hold in a laugh
Being described as a "headless man wearing a pumpkin on his neck" in Big Boogey Adventure
With that in mind, it's easy to imagine him simply swapping out his head for a new one, not much unlike taking off one hat for a different one.
This is, however, complicated by the existence of an unlockable costume (skin) in the fighting game which shows his body being entirely made up of vines, which is... interesting, to say the least!
Since this is simply an alternative costume in a video game, we're left with some level of ambiguity here as to whether this is only done for cosmetic reasons, or an actual representation of what's under there:
As far as I know, we unfortunately don't have a canon answer to this (Always happy to be corrected if we do though!!), but my personal interpretation is that his pumpkin head is alive somehow, with the plant matter slowly overtaking his original human form and growing into his clothing — His feet even have the same curly shape of his boots lol!
If his current body is an extension of the pumpkin head, you probably shouldn't be able to simply separate them and put a new head on there, BUT! Keep in mind that this is only realistically speaking, and since this is the world of cartoons, I don't see why that shouldn't be allowed to happen, especially when the "headless" aspect is so intrinsic to his character.
I can absolutely see it being used for future gags if he had been given more major appearances in the series lol. Just don't worry too much about the logic behind it <3

awooooo i've posted his design over on my rp blog but i'll drop it here too. for anyone else reading this AU is inherently linked to the despicable me x cars crossover i've been writing with dear friends @dru-gru and @dykes4dru
so, somewhere along the line nebulously after cars 1 and before cars 2, chick gets bit and gains a new affliction. details are fuzzy and non-important; reality is he obviously can't race anymore. a while later he ends up living with a freaky vampire balthazar bratt and just as freaky totally-normal-human dru gru.
he can't race! he can no longer do the only thing he's done for the entirety of his life and is completely ostracized from the racing world now as the cherry on top. that's kind of a big deal. i think he's kind of handed himself over to a lot of his newfound instincts as a form of giving up.
in the same vein he'll also hate it when he's outright treated like an animal, despite, y'know, the fact he's pretty much asking to be treated like one with his behavior. he has no excuses.
not-quite-so traditional werewolf. i think he obviously looks most wolfish on the full moon, but between when that occurs he'll (involuntarily) oscillate between looking like just a regular guy and this more wolfman-esque appearance he has above. his gold tooth does change with the rest of his teeth. he is a biter.
he gets THE most horrific pre and post-transformation muscle cramps.
i headcanon he sleepwalks even generally-speaking, but excessively so in this AU because he's become so much more of a restless sleeper. maybe part of it is an inherent instinct linked to the lycanthropy that's trying to get him out of enclosed spaces. and, going back to the cramps, also subconsciously does it to walk them off.
sleepwalks into the others' rooms! curls up on their beds. he's warm to be around, at least.
if he was explosive before, he's even worse now. mixture of kneejerk instincts, a lot of pent up aggression, and chronic pain will do that to someone. doesn't help that his way of venting this frustration is even more physical than before.

yes, actually! i do have a couple of stories behind her pokemon!
most notably, i will start from the "beginning" because this is most important to her story! she used to live in Geosenge town, born and raised there. she was given a Poochyena from her mother and she considered her to be her own best friend, especially coming from a very small town. she would keep this Poochyena, named Harley, out of its ball very often! wherever Mallow would go, Harley would be found trotting along shortly behind!
it wasnt until the reveal & deactivation of the Ultimate Weapon is when the two were unfortunately separated. Mallow went out to run a couple of errands outside of town, she left Harley at home with her mother. coming back to a destroyed house.
no mother. no Harley. Mallow couldn't trust herself to leave any of her pokemon at home alone anymore.
she chose to move to Lumiose, to make a new life for herself
it was a long time before she could catch any pokemon herself, but she did end up raising a nice and good team! most of them stay in the pokeball themselves, aside from her Houndoom, Athena. she acts as an emotional support 'mon! the two have forged a strong bond together, and she was able to achieve Mega Evolution with her!
while she doesn't throw Athena out into battle for the first encounter, her go-to starting pokemon would be either her Krookodile, Bandit, or her Scrafty, Duster!
her Pangoro, Nutmeg, and Umbreon, Moonlight, are usually reserved for rematch battles at least!
aaand while she does have an image to keep up as a dark type trainer, she also has a Scolipede named Frankie and a Snubbull named Octavius! (affectionately nicknamed Oggy) she doesn't keep them at her own place because of her past trauma, but she does have the grunts at the Rust Syndicate watch over them, Corbeau's orders, after al!
