#Repost @mylovelyladyhops ・・・ Lunch IPA by @mainebeerco This is my first time having a beer from Maine Beer Company, and all the good things I have heard are true! I decided to have a Dry Aged New York Strip, with a butter bath in a cast iron for lunch, so I had Lunch IPA with my lunch. It was a very nice West Cost style IPA with a firm hop bitterness, tropical fruit aroma and flavor, and finished with a pine flavor and aroma. Really nice beer! Dry aging is a post mortem treatment for beef designed primarily to intensify flavor, with a secondary benefit of promoting tenderness. The flavor development is shaped by both a reduction in moisture which correlates to a concentration of flavor, and the cultivation of ‘good’ mold and bacteria to lend a funky, nutty profile to the meat. In short – dry aging makes beef taste really, really good.
