Lamb Wellington with Chicken Mousse, Parma Ham and Spinach
The striking, almost abstract cross section of this incredible Wellington showcases lamb loins wrapped in spinach and encased in a soft chicken mousse, studded with mushrooms, peppers and more. Wrapped in Parma ham and then puff pastry, it's a guaranteed stunner to serve. The lamb sauce does take a while to create, and it is optional, but if you have the time in advance to put it together it really makes the dish sing.

The invention of béchamel sauce is traditionally attributed to Louis de Béchameil, Marquis de Nointel and chief steward to Louis XIV.
In reality, it was refined in the royal kitchens from earlier Italian cream sauces.
In 1651, chef François Pierre La Varenne gave the sauce its modern name in the cookbook Le Cuisinier françois. He named the sauce after the Marquis de Nointel in a blatant attempt to ingratiate himself to a potential employer. It wasn't a first for La Varenne, who had also renamed an earlier dish of diced mushrooms "duxelles" after his then-employer, the Marquis d'Uxelles.
